Ullja Kuntze, founder of Ullja's Gusto, Waco's Local Sustainable Food movement and chef, has been cooking up some wonderful Quinoa recipes this week.
Quinoa, which is a seed often related with grains such as wheat or rice, is a very powerful protein source since it contains all the essential amino acids. Quinoa can be cooked like rice but you must rinse it in a strainer very well before cooking. Incorporate it in stew dishes, in stuffings, in salads and get a healthy dose of protein. Quinoa is a great healthy source for protein especially for Vegetarians or for those how to try to reduce eating red meat.

Here is a quick tip to save on energy while cooking in the kitchen :
Did you know when you cover your pots while cooking that you actually save alot on energy. Cooking with the lid open is pretty much like trying to heat the room while your window is open in winter.

I know with some recipes you wont be able to save energy by covering the lid, however the best time would be while waiting for your pasta water to boil.

Happy Start to a wonderful Summer and I cant wait for 4th of July Holidays and Festive Cooking ideas when i will be doing some major long-awaited grilling while watching the beautiful fireworks that will happen in my town of Waco.

We need desserts and sweets too...in moderation... and when we eat those, they better be all natural and made with the freshest ingredients.
A creamy raspberry cheesecake made with fresh raspberries picked from local farmers, fresh eggs, and organic ingredients...the cookie crust is also made from scratch since most of the store-bought graham crackers have high fructose corn syrup.

Ulljas Gusto, Wonders of Tofu as alternative to protein

Ulljas Gusto, Local Food Movement Waco-TX~ITS SOY SIMPLE WITH TOFU:
Ullja Kuntze, founder of Ulljas Gusto local food movement and multi-cultural chef, has been cooking asian cuisine this week. Teaching the wonders of Tofu with mouth-watering recipes..healthy, meat-free, Tofu is great for Vegetarians and for those who would like to consume less meat.
Tofu has been around for centuries and has become popular in the Western cultures in the 20th century but still as of today, there are many people who have never used it before nor are familiar with Tofu recipes.
In my opinion, the most important things to do with Tofu before using it in recipes is pressing and marinating.
After you drain, rinse and pat your tofu with a kitchen towel, wrap it with a clean tea towel and place it on a plate..cover with a heavy cutting board and place a heavy pan on top for 15min ...this "pressing" will make the tofu even firmer..now you are ready to marinate the Tofu block...i love using freshly grinded ginger and curry paste...delicious!
Did you know that Tofu contains essential amino acids, it's low in saturated fat, salt and carbohydrates and is cholesterol-free...Tofu-a great alternative source of protein.

HIGH FRUCTOSE CORN SYRUP AND OBESITY

Ullja's, Ullja's Gusto, Local Food movement Waco-TX, High Fructose Corn syrup:
As a part of our eating local, sustainable food movement in Waco-Texas, we are learing also how to read food labels and what things to watch out for.
One of the most abundant ingredient in both foods and drinks happens to be High Fructose Corn Syrup. Fructose in the food and drink products is mainly derived artificially from corn and it is called HFCS (high fructose corn syrup) and used as a sugar substitute as well as a preservative. Tablesugar which is made from either sugarcane or beets is made out of glucose and fructose.
So why is it that most of the processed foods, juices, deli meats, icecreams, candybars and even white and wheat breads, just to name only a few items with HFCS, have this HFCS (high fructose corn syrup) and not tablesugar (sucrose)??
What is the craze about lowering your Fructose/HFCS intake as much as possible? Consumers are speaking out in every corner of the nation against the HFCS use in food and drink products. Some food producing corporations have even started a new initiative to eliminate HFCS and substitute it with Sucrose, the Tablesugar.

We have discussed the issue of why high levels of Fructose is harmful to your health and the direct relation with obesity and heart disease in our Ullja's Gusto, local food movement and we will continue as a group to watch out the level of Fructose intake.

Ullja's Gusto Food Movement Waco Texas, Eating Healthy with Stir-fry Recipes


Ullja's Gusto Food movement Waco Texas, Eating Healthy and Sustainable with Stir-fry Recipes:
Ullja Kuntze, founder and chef of Ullja's Gusto Sustainable Food movement in Waco-Texas, has been teaching the community members to incorporate many easy-to-do, stir-fry recipes with fresh produce bought from local farmers in Waco-Texas. Eating sustainable, local fresh food has many advantages, including financial, economic, and most of all its the best way for ones health.

Here is an easy recipe using fresh, local produce from farmers:

Chicken Stir-fry made with zucchini, fresh green onions, mushrooms, and leeks...just cut them all, add a little extra virgin olive oil in your pan and start stirring them until all is cooked...stir-frying veggies is done quickly..make sure the chicken is well done (i usually stir-fry the chicken first and then add all the veggies...to season, i only use sea salt and freshly ground pepper...you can also add some freshly ground ginger to this or use some fresh chopped parsley.Try to stay away from ready-made seasonings and flavorings which are mostly filled with artificial chemicals and ingredients.

AVOID FOOD CRAVINGS:

Why do we love food? The main reasons are, it gives us energy and it makes us feel good. Usually, the higher in calories, sugar and fat, the bigger the yum factor.
However, if you eat too much carbs and little nutrients all the time, you will feel less energetic. Carbs may be a good source of potential energy, but without other nutrients it cant get processed into usable energy so it ends up as fat.

Eating a balanced diet including veggies, seeds, nuts, fish will provide your body with the nutrition it needs to produce energy.

Remember, dont rely on food for the feel-good factor, be more active and make sure you have some fun.

Waco eats healthy, fresh and tasty campaign of Ullja's Gusto Food movement is in full swing. This past week, Ullja Kuntze, founder of the revolutionary food movement in Waco, has visited various community gardens and would like to share the wonderful experience.
World Hunger Relief, which is a Christian Organization that is dedicated to the reducing hunger around the world, is partnering in our Waco community with various local organizations in order to educate and participate in the sustainable food cycle.Urban Gardening and community gardening has been prospering in the Waco Texas community due to this wonderful organization's mission and education. Many after school programs with school garden projects have been established with the partnership of the World Hunger Relief and the Heart of Texas Urban Gardening coalition. Schools and the kids of Waco are learning the importance of where food comes from and how its grown. Ullja's Gusto Food movement of Waco Texas is so proud to be part of educating the Waco community of the importance between Plate and Planet.

Ullja's Gusto Food Movement Waco Texas, Calvary Community Garden


Ullja's Gusto Food movement in Waco visited today the Calvary Community Garden which has started in February of this year. This fantastic project is another jewel of Waco worth seeing and supporting. Community members and church-goers helping out spreading the word of this vegetable and fruit garden which is almost ready to harvest and which will eventually help out and contribute to local food banks, kitchens, restaurants, chefs and so much more.

What a joy to see Waco prospering in this sustainable local food movement...here is another example: The Calvary Community Garden in Waco Texas....good job guys!

Everyone is talking about a nice, home-cooked meal and the importance of the connection between Plate and Planet...to eat sustainable, local food. At Ullja's Gusto Food movement, we try to educate our community of how important it is to support our local farmers and to learn to eat HEALTHY, FRESH AND TASTY.
Here are some great reasons why you should make cooking with local food at home a ritual:
1) It is more ECONOMICAL: you save money because you dont pay for someone else's cost of running their business such as a restaurant (or for packaging, processing, and advertising costs for the prepared foods found at the grocery store). You buy locally produced foods from farmers and artisan food producers and save on the cost of transporting food across the nation while you support the local farmers to stay in business.

2) It is HEALTHIER: you have control over what goes in your recipe, how its prepared and food that is locally grown is FRESHER and more NUTRITIOUS.

3)Eating healthy foods does also TASTE better. All the processed food with its cheap chemicals, corn syrup derivates, preservatives has literally corrupted the taste palates and the wonderfully, delicious fresh food tastes are forgotten.

4) If you cook at home using fresh food products, you have more control over what goes in your body then when you eat out...so, another advantage is that home-cooking is SAFER

5)Sustainable Home cooking is also very satisfying...you are doing something very good for yourself and your loved ones-preparing healthy, fresh, and tasty meals while supporting your local farmers and the environment you live in.
